This wasn't just an event invitation; it was an exploration of the boundaries of flavor.

When I received an invitation from the "Mexican Chamber of Commerce and Culture in Taiwan" to design desserts for a tasting event hosted by the New Mexico Trade Office in Taiwan, the first thought that popped into my head was: "How can I make desserts speak, telling the stories of two distinct cultures?"

When a French Soul Meets the Fiery Spirit of New Mexico

We chose TELAPA's most representative French classic—Galette des Rois—as our canvas. The Galette des Rois symbolizes sharing and tradition, and to connect it with the soul of New Mexico, the key lay in a legendary local ingredient: Hatch Chili.

During the development process at the Atelier, I repeatedly tried to balance that subtle, spicy warmth. Ultimately, we decided to use TELAPA's core " pure natural almond butter" as a harmonizing agent.

  • Layers of Flavor: The rich aroma of almond butter leads, followed by the silky smoothness of bittersweet chocolate.

  • A Surprising Turn: Finally, the spiciness of New Mexico chili gently dances on the back of the tongue.

This design wasn't about stimulation; it was about **"accompaniment."** When it encountered the gin and whiskey at the event, the spiciness of the chili actually accentuated the herbal and woody notes in the liquor. That interweaving of flavors left the guests utterly amazed.

Desserts: A Gentle Connection Across Maps

That evening, many guests told me they had never imagined that French craftsmanship could harmonize so beautifully with the passion of New Mexico.

For me, this is the meaning of TELAPA's existence. We are not just making desserts; we are telling stories through taste. Through scientific proportions and emotional creativity, we allow desserts to transcend geographical and linguistic boundaries, becoming the gentlest connection between people and cultures.

 

About the Author: Tiff holds a Le Cordon Bleu certificate and a background in nutrition, dedicated to integrating "STEAM education" into baking. In this cross-cultural collaboration with New Mexico, Tiff once again demonstrated how to deconstruct complex flavors through scientific logic, making desserts not just food, but also a medium for cross-cultural communication.
